Mooli Paratha/ Radish Paratha/Flatbread is a popular North Indian recipe prepared for Breakfast. There are two distinct ways of making Mooli Parathas. The traditional way is to make the Paratha by stuffing Mooli (Radish) Masala where grated radish are sauted and then stuffed into the paratha. An easier way that makes equally delicious Mooli Parathas involves making the Mooli Parathas by adding the raw grated Mooli(radish) while making the dough itself. This recipe gives you my preferred method – the raw.
Ingredients For Mooli Paratha Recipe
- 2 Cups Whole Wheat Flour
- 2 Medium Sized Radish (Mooli), grated
- 1 inch ginger, grated
- 1 Teaspoon Ajwain (Carom Seeds)
- 1 Green Chilli, finely chopped
- 1 Teaspoon Salt, or as per taste
- 2 Teaspoons Oil
- 1 bunch coriander leaves, chopped
- Scrape and grate the radish. Add half a teaspoon of salt to the radish. Mix well and set aside. While the salted radish rests, prepare the other ingredients: chop coriander leaves and green chilies finely. Squeeze out the water from radish into a separate container. Tip: After squeezing the radish , let it rest for another five minutes and re-squeeze for a totally un-messy filling. Do not throw the water away – use it for kneading the atta for the parathas.
- To the grated radish, add grated ginger, chopped coriander leaves and green chilies, carom seeds. Mix the seasoning well with the grated radish.
- Take 2 cups of whole wheat flour in a wide bowl. Add Salt to the bowl. Mix all the ingredients.Now add the radishes to the flour mixture.
- Add water as little as possible and knead to make a soft dough. Take care not to add too much water since the Radish will leave some water.
- Let the dough sit for 10 minutes.Divide the dough into 6-8 equal parts.
Make small balls and flatten them using a rolling pin and a board. - Heat a tawa or girdle and put the paratha on the tawa. When the paratha is cooked from one side, reduce the flame and turn the paratha.
- Apply oil or ghee on the top. Again turn and apply ghee on the other side as well.Cook this way on low heat, till both sides turn golden brown. The paratha should become crispy from outside and soft & cooked from the inside.
- Mooli paratha is ready. Serve it hot with Plain Yogurt.
