No odia festival is complete without the mention of Pitha and Raja is one such festival where variety of pithas are made for a span of during 3 days. Among all other pithas , podapitha stands out among all. It is such a versatile pitha that can take many forms. From simple janta pitha , it can be made with vegetables as well as fruits that has more pulp in it like mangoes and jackfruit that are mainly summer fruits. Since Raja is an agrarian festival and in villages, the ladies of the family beautifully pair chaula chuna ( rice powder) with amba( mango) panasa(jackfruit) lau ( bottle gourd) to come with variety of podapitha during Raja. As #rice is the most preferred grain and widely cultivated, its presence is an integral part of our odia culture and cuisine .
I have made this panasa podapitha (Jackfruit podapitha) for our evening teatime snack and its a hit with everyone who have tasted. let me tell its the most easiest recipe i have ever tried in my kitchen but donot use fine rice powder for it , use rice rawa to make this podapitha.
Ingredients
- 1 and ½ cups Rice flour(Rice Rawa)
- 2 cups jackfruit puree
- 2 tsp ghee
- ¼ tsp salt
- ¼ tsp cardamom powder
- ½ tsp black pepper powder
Lets learn to make this :
- Remove seeds from the jackfruit and sieve through a strainer so that you can get smooth puree minus the fibres.
- To this puree start adding the rice rawa slowly and the consistency should be not too runny nor too thick .
- Now mix salt, cardamom powder and black pepper powder to it and mix well.
- Take a banana leaf and heat it over the gas stove to make it soft. Now place the banana leaf inside a pressure cooker and apply ghee over it. Noe pour the batter inside this and close the lid of the pressure cooker. Remember to take off the whistle.
- Cook for 20 to 25 mts on slow flame and to know if its done or not, insert a knife and if it comes out clean , its done. If not cook for 5 more minutes .
- Let it cool completely and then slice and serve.
